Into My Kitchen: Three-Bean Vegetarian Chili

Although I do love to cook, I fully appreciate a meal that involves throwing a bunch of ingredients into a pot and letting them cook, hence why chili is one of my favorite dishes!  Not to mention the fact that a hot bowl of chili is perfect for a winter day.  I received the latest edition of Cooking Light earlier this week, which had pictures of chili on the cover…I knew what I was having for dinner this week!

I decided to go with the Three-Bean Vegetarian Chili (click for recipe).  I’m not a huge fan of butternut squash, so I replace it with zucchini.  Additionally, I have obscene amounts of chicken broth leftover from a recipe I didn’t end up making, so I used chicken broth instead of vegetable broth…I guess it’s not actually vegetarian, but it works for me!  Let’s check out the goods:

As I was making it, I kept thinking…”This is sooooo much food!”  Not a complaint at all!  Consumed with some multigrain tortilla chips, this is definitely a winner.

I’m off to heat up some for lunch!  Yum!

    you would laugh at my last chili “recipe”. it involved once can of health valley spicy black bean (already made) chili, and one can of fire roasted chopped tomatoes, and stirring. And possibly a microwave. :D

    Ohhh that looks good. I really prefer my chili without meat – though I’m insistent that black beans be included. Think that they would be okay subbed for pinto in this one? Is it spicy? I like it spiiiicay.
