Into My Kitchen: White Bean Soup with Kale and Chorizo
It’s been awhile since I featured some of my cooking here! Don’t you worry, I have yet to succumb to the NYC lifestyle of eating out for every meal, although with all the options around and convenience of everything (and inconvenience of grocery shopping!), it’s easy to see why people eat out so much. However, it is expensive and not necessarily the most healthy thing to do…plus, I like to cook! My main qualm is that I think meals are events that should be enjoyed with others, so I do wish I had someone to cook for or at least eat with. Anyone in NYC want a home cooked meal?? Let me know!
If you didn’t know, I’m a big fan of Cooking Light magazine, as I’ve had much success with their recipes, plus it’s fun to get in the mail and page through every month. Yes, all the recipes can be found online, but there’s something about flipping through the pages of a new magazine that is really exciting. The arrival of the latest issue was nicely timed with the arrival of some cooler weather here in NYC, so I knew that soup recipes would strike my fancy. White Bean Soup with Kale and Chorizo? Don’t mind if I do!
The recipe is in the link, but it’s super easy to follow and quick to make! I haven’t had chorizo sausage in a long time, but it adds a nice flavor to the soup.
It always looks better in the magazine, but mine was pretty tasty!
I bought some bread to dip into the soup, which was great for soaking up some of the broth. Clementines on the side? Yes, please. Also, can you spot my new spoon?
I definitely recommend this soup! It’s super quick to make (even if you don’t use pre-chopped onion and kale like the recipe calls for), and like most soups, it tastes better on the second (or third!) day. Enjoy!

Don’t tease – I would love a home cooked meal. My boyfriend is leaving next week for a 3 month long work training. I’m a very good eater!
I am not a big fan of sausage by itself, but I love using it to flavor things. A big bowl of soup with bread for dipping? That sounds like the perfect comfort food in the hustle and bustle of NYC.
I love Cooking Light too – although I’ve had some bad recipes from there. My other favorite cooking magazine is Vegetarian Times. I’m not a vegetarian anymore but they have some amazing recipes that you could just add chicken to, or eat a meatless meal.
