Into My Kitchen: Chickpea Pot Pie
So if you must know…here’s my confession of the day: Raw meat kind of skeeves me out. If you cook it for me, I’ll it. (Most of the time. Admittedly, ever since I started eating less meat, I don’t really enjoy it as much as I used to. Chicken is highly overrated, but a good burger is a good burger. Let’s be honest.) Anyway, that was a tangent, but the point was, when I’m looking for new recipes, I usually seek out vegetarian recipes because I attempt to avoid raw meat*, and well, I’m cheap and beans are much cheaper than meat. Just saying.
When looking for a new recipe to try this week, I decided to browse the Vegetarian Times website, which is obviously full of vegetarian recipes. I have a bit of a love for one dish recipes such as casseroles, so I jumped at the chance to make these Chickpea Pot Pies. Don’t they look delicious?? I thought so.
I made a few adjustments which included eliminating the peas (I just don’t like peas, okay?), not using cornstarch (I forgot to buy it…just doubled the flour instead), used olive oil instead of grapeseed oil (that stuff is expensive!), and I used a pizza crust (which I should have made…would have been cheaper…oh well).

The verdict? These were delicious! They took a bit longer to make than I originally thought (I guess I should read the directions before making them…), but they were well worth it. I wish that the inside was a little creamier/wetter…perhaps I simmered a little too long so the liquid all boiled off? Who knows. Still enjoyed it!
The best part? I have five more to enjoy! I hope these reheat well since I’ll take them to work with me…and I have another idea up my sleeve for the rest of the pizza crust and ingredients. Stay tuned!

* I had sushi for the first time last week. I had a spicy tuna roll and a mango/avocado roll. While I’m happy I finally tried it…I’m not sure I’ll have it again! The texture combined with my mini-aversion to raw meat didn’t lead to the most enjoyable experience. Plus, each “bite” of sushi is huge! I wanted to cut them in half.

I didn’t like sushi in the beginning either but then I waitressed at a sushi bar and grew to LOVE it. I crave it weekly:) Have an amazing Wednesday!
handling/cooking raw meat = things that a guy should do.
i definitely take multiple bites of each piece of sushi. it makes a mess and i don’t care. i love it!
