Into My Kitchen: Autumn Wild Rice Rissoles
For the record, I make some pretty tasty food. Just throwing that out there…I’m a pretty good cook. However, every once in awhile, I make some purely delicious food. Food that makes my tummy smile and makes me truly sad to be done with the meal. That’s what tonight was. I’m quite satisfied but want to go make for more because it was that good. I suppose that’s what leftovers are for.
So what did I make? Well, per my last edition of Into My Kitchen, I’ve been perusing Vegetarian Times for recipes…and they have some good stuff. When I saw these Autumn Wild Rice Rissoles, I was SOLD! Red onion? Cranberries? PECANS? Count me in.
Well, let’s take a step back. In case you didn’t know, ingredients such as dried cranberries and pecans are expensive. While at the store, I kept thinking to myself, “I should make recipes with cheaper ingredients.” I could live off of rice and beans, right? Okay, after making this dish, that’s totally false. It was worth every penny that I paid for those pecans.
Anyway, I digress. This was fantastic. FANTASTIC, I tell you. I had a little bit of an issue making the patties, but I just kept adding cracker crumbs and they eventually formed a little bit better. Not that the crumbles chunks are any less tasty. Check it out:
With a side of broccoli. SO GOOD.
The recipe called for a cranberry sauce, but I liked the mango chutney much better. Good contrast.
I will be enjoying this pile of goodness for the next few days.
In all seriousness, this was ridiculously tasty. I could taste the rosemary and the cranberries and the pecans…topped with the mango chutney…so good! I would definitely recommend making this, even for people who don’t think a meal is complete without a little meat! You won’t miss it one bit.
Also, the flavor combination would definitely be acceptable for the upcoming Thanksgiving holiday!

I do not think you make food as tasty as me
I wonder if a little vital wheat gluten wouldn’t help keep the cakes together a bit more? I use that in my black bean burgers and it works like a dream. These guys sure look DELICIOUS!!!
