Into My Kitchen: Mediterranean Salad

One of the fun parts about night shift is that the nurses really do work together, and since no one else is really around (respiratory comes around now and then, and the resident on call is up unless he can snooze a little if things are status quo), we can have some fun together.  Usually between midnight and 2am, we have coffee time…coffee is brewed and sometimes we have cookies or something else that someone brings in.  It’s fun, and sometimes I need a little caffeine kick in the pants to push me through the rest of the shift.

In the spirit of sharing, one nurse brought in bulgur wheat and let us all try it…I’ve had many different types of grains before, but never bulgur.  It was actually quite delicious with a bit of a nutty flavor to it, and once I had it I knew I had to try to make something with it at home. Yesterday I finally got around to looking up some recipes, and I came up with this Mediterranean salad that looked quite tasty.

But, Susan, you’re thinking…that recipe doesn’t have bulgur in it!  Well…I know.  But I couldn’t find another one to suit my fancy, so I decided to make the salad and then mix in the bulgur.  Let’s just say this was a brilliant idea!  The salad was super quick to make…made it before my four hour nap before work, letting the dressing really soak in.  I added some cucumber to the salad since it sounded good (and I like cucumber, okay?)…and that was that.

Mmmmm delicious!  Sampled at 2am, I had a winner.  Check it out:

Next time I would probably go a little bit lighter on the red onion since it really shines through, but the sun dried tomatoes are an AWESOME addition to this salad.  Also, it’s very light and fresh tasting, which is great for spring.  I highly recommend making this recipe…it can definitely be tailored to your own liking, so don’t be afraid to give it a go!

    I bet it helps so much with your night shifts to have the support and friendship of other nurses! The salad looks so perfect for summer. I am all about the simple recipes. Never tried bulgur but it’s been on my “foods to buy” list for a while!

    I do the same thing on nightshift…I say “lunch/dinner”, never really sure what to call it.

    This sounds tasty! Quick question–did you make all four servings and then save it for a few days? I’m not sure if it would get too soggy. Blech.

    This sounds like my kind of salad! I don’t think I’ve ever used bulgur before. Glad you can enjoy time with the other nurses at night, to. It gets pretty crazy around the floors during the day, I imagine. My place of employment is always humming with activity when I’m there. :)

    American Cupcake for the WIN! It’s so fun there! Focus on the experience, not necessarily the cupcakes ;)

    Also, Nick’s Crispy Tacos on Polk is cheap and fun.

    I also really love the California Academy of Sciences…pretty much a kick-ass museum with a rain forest inside. It’ multiple levels of awesome and I think you can buy discounted tickets at Costco.

    You have a lot of the other big items on your list already, but I can’t wait to chat more. See you soon!

    I always love finding new grains! Gotta try this one! and I’m sure if all of you nurses didn’t share and enjoy your time together – it would be one LONG night.
